Peanut Butter Cheerios Treats



I got this recipe from this site. I made this for an office breakfast. This was so easy to make and very good, great for peanut butter lovers!


Ingredients:
  • 6 cups Peanut Butter Cheerios
  • 2 Tablespoons butter
  • 1/3 cup smooth peanut butter
  • 10 ounces (approx. 40 ) regular sized marshmallows. I used the whole package, there were about 45 give or take some... I might have put some in my mouth while I made this.
  • 1 cup chocolate chips. This really isn't needed, more for looks.

Directions:
Prep a 9×13 pan with cooking spray or buttered parchment.
In a pan over medium high heat melt the butter and peanut butter. Add in the marshmallows until you get a nice gooey mess.
Add the Peanut Butter Cheerios and stir to combine making sure all of the cereal gets coated.
Press into the prepped pan and while the cereal is still warm, sprinkle the chocolate chips on top so they melt slightly.
Let cool and cut into squares. These taste best if served the same day.


Easy Indian Shrimp

Indian Spiced Shrimp

I got this recipe from this site. I used some short cuts. I used pre-chopped garlic, and onion powder (instead of onions) and ground ginger spice (instead of  real ginger). These shortcuts made this meal's cook time 10 minutes or less. My philosophy is the less time in the kitchen the better. It turned out great! I ate this on Naan, but I want to try it over white rice the next time I make this.


Ingredients:

2 cloves garlic, peeled
1 1-inch piece peeled ginger, about the thickness of a thumb, quartered
  • 1 medium onion, cut into chunks
  • 3 tablespoons vegetable oil
  • 2 teaspoons curry powder
  • 1 teaspoon cumin powder
  • 1/8 teaspoon cayenne
  • 1/2 teaspoon salt
  • 1 tablespoon tomato paste
  • 3/4 cup water
  • 1 1/2 pound cleaned medium or larger shrimp
  • Accompaniment: flat bread like Naan or Pita or white rice

Directions:

  • Drop garlic and ginger through feed tube of a food processor with motor running and process until finely chopped. Add onion and pulse until chopped.
  • Cook onion mixture in oil in a heavy 12-inch skillet over medium heat, stirring frequently, until just golden, about 5 minutes. Add spices and salt and cook, stirring, 1 minute longer.
  • Stir in tomato paste and cook, stirring, 1 minute. Then stir in water and bring to a simmer. Add shrimp and cook, covered, until shrimp are just cooked through, 2 to 3 minutes.
  • Serve with flatbread or over rice.

The Perfect Football Finger Food - Cheesey Bacon Oven Chips

 

I got this recipe from this site. I did not make the dip, but these honestly don't need anything.

Cheesy Bacon Oven Chips 


  • 1 large, uniformly-shaped russet potato, scrubbed well and sliced into 1/8" rounds*
  • cooking spray
  • 3/4 C. shredded colby jack or cheddar cheese
  • salt & pepper to taste
  • 2 T. crumbled bacon (about 2 slices) - I used bacon bits
  • chopped parsley or chives, for garnish (optional, I did not use)

Preheat oven to 375 degrees.  Bring sliced potatoes to a boil in cold, salted water to cover for 5 minutes.  Carefully drain, and transfer slices to a paper-towel lined counter top or cutting board.  Pat to dry.

Grease a baking sheet with cooking spray, and lay out potato slices so they are overlapping on it.  Spray lightly with additional cooking spray, then sprinkle with salt & pepper to taste.  Sprinkle evenly with shredded cheese & bacon.  Bake 12-14 minutes in preheated oven until cheese is melted & bubbly.

*You can use 2 medium-sized potatoes rather than 1 large.  Also, I like to leave the skin on but you can peel the potatoes if you prefer.

Incredible Oreo Dessert



This desert is delicious. My boyfriend's family was at my house and I offered them some, he was not happy about sharing this. I got the recipe from this site.

  • 1 package of regular Oreos - I used fat free and this still was incredible
  • 1/2 cup of butter (melted)
  • 1 large box of instant chocolate pudding
  • 16 oz cool whip - I used 8 oz fat free and 8 oz regular
  • 8 oz. of cream cheese (softened)
  • 1 cup powdered sugar


Crush the whole package of cookies with a food processor.  Save a 1/2 cup to sprinkle on top of dessert when it's done.  Pour the remaining crumbs in a 13x9 pan.  Melt butter and pour into crumb mix.  Stir together and press crumbs in bottom of pan to make a crust.  Make chocolate pudding according to package directions and cool in the fridge.  In a mixing bowl blend cream cheese until nice and smooth and then add powdered sugar, mix.  Then fold in 1-8 oz thing of cool whip.  Top oreo layer with cream cheese mix, then pudding, then your last 8 oz thing of cool whip, and then sprinkle remaining Oreo's on top.  Cover and refrigerate until ready to serve.

Make Fajitas in Your Oven!



I love fajitas, and when I make them for myself I always simplify the process by using the Old El Paso Fajita Kits. However, standing over the stove is still too much effort. This recipe simplifies fajita making even more. Just put all of the ingredients in the oven! And it does not take away from the taste!

Ingredients
  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 2 Tbsp vegetable oil
  • 2 tsp chili powder
  • 2 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ¼ tsp salt
  • 1 (15 oz) can diced tomatoes with green chilies
  • 1 medium onion, sliced
  • 1 large bell pepper, seeded and sliced (I use half a green and half a red)
  • 12 flour tortillas
  • Toppings such as cheese, sour cream, and guacamole – if desired
Instructions
  1. Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.
  2. In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt
  3. Drizzle the spice mixture over the chicken and stir to coat.
  4. Next add the tomatoes, peppers, and onions to the dish and stir to combine.
  5. Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender. Serve on tortillas with desired toppings.

Easy Chicken and Rice



This is so delicious, my boyfriend ate about 5 chicken breasts and almost a whole box of rice in one night. Not to mention it is so easy to make, I put all the ingredients in a Pyrex dish and cooked it in the oven for 2 1/2 hours and it was ready to serve.

In a Pyrex dish add:

  • 1 box Uncle Ben's Long Grain Wild Rice 
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 can water 6 Chicken breasts


Cover with foil and bake for 2 1/2 hours at 350 degrees.

Delicious Grilled Chicken

This is probably the best homemade grilled chicken I have ever had. The official title is called "Island Grilled Chicken" but there really isn't anything tropical or special about it. I got the recipe from this site, also stealing their picture.

This marinade is for 2-4 chicken breasts. I used 5 and it was still fine. Mix the following ingredients together and marinade for 3-10 hours:


  • 1/3 cup vegetable oil
  • 3 tablespoons freshly squeezed lemon juice (I used one large lemon)
  • 1 ½ tablespoons soy sauce
  • 1 clove garlic, finely minced
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper


Then grill and enjoy! My boyfriend did the grilling so I really have no helpful hints other than the oil from the marinade makes a big flame... he wasn't too happy that I didn't warn him before hand.
