Incredible Oreo Dessert



This desert is delicious. My boyfriend's family was at my house and I offered them some, he was not happy about sharing this. I got the recipe from this site.

  • 1 package of regular Oreos - I used fat free and this still was incredible
  • 1/2 cup of butter (melted)
  • 1 large box of instant chocolate pudding
  • 16 oz cool whip - I used 8 oz fat free and 8 oz regular
  • 8 oz. of cream cheese (softened)
  • 1 cup powdered sugar


Crush the whole package of cookies with a food processor.  Save a 1/2 cup to sprinkle on top of dessert when it's done.  Pour the remaining crumbs in a 13x9 pan.  Melt butter and pour into crumb mix.  Stir together and press crumbs in bottom of pan to make a crust.  Make chocolate pudding according to package directions and cool in the fridge.  In a mixing bowl blend cream cheese until nice and smooth and then add powdered sugar, mix.  Then fold in 1-8 oz thing of cool whip.  Top oreo layer with cream cheese mix, then pudding, then your last 8 oz thing of cool whip, and then sprinkle remaining Oreo's on top.  Cover and refrigerate until ready to serve.

Make Fajitas in Your Oven!



I love fajitas, and when I make them for myself I always simplify the process by using the Old El Paso Fajita Kits. However, standing over the stove is still too much effort. This recipe simplifies fajita making even more. Just put all of the ingredients in the oven! And it does not take away from the taste!

Ingredients
  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 2 Tbsp vegetable oil
  • 2 tsp chili powder
  • 2 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ¼ tsp salt
  • 1 (15 oz) can diced tomatoes with green chilies
  • 1 medium onion, sliced
  • 1 large bell pepper, seeded and sliced (I use half a green and half a red)
  • 12 flour tortillas
  • Toppings such as cheese, sour cream, and guacamole – if desired
Instructions
  1. Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.
  2. In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt
  3. Drizzle the spice mixture over the chicken and stir to coat.
  4. Next add the tomatoes, peppers, and onions to the dish and stir to combine.
  5. Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender. Serve on tortillas with desired toppings.

Easy Chicken and Rice



This is so delicious, my boyfriend ate about 5 chicken breasts and almost a whole box of rice in one night. Not to mention it is so easy to make, I put all the ingredients in a Pyrex dish and cooked it in the oven for 2 1/2 hours and it was ready to serve.

In a Pyrex dish add:

  • 1 box Uncle Ben's Long Grain Wild Rice 
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 can water 6 Chicken breasts


Cover with foil and bake for 2 1/2 hours at 350 degrees.

Delicious Grilled Chicken

This is probably the best homemade grilled chicken I have ever had. The official title is called "Island Grilled Chicken" but there really isn't anything tropical or special about it. I got the recipe from this site, also stealing their picture.

This marinade is for 2-4 chicken breasts. I used 5 and it was still fine. Mix the following ingredients together and marinade for 3-10 hours:


  • 1/3 cup vegetable oil
  • 3 tablespoons freshly squeezed lemon juice (I used one large lemon)
  • 1 ½ tablespoons soy sauce
  • 1 clove garlic, finely minced
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper


Then grill and enjoy! My boyfriend did the grilling so I really have no helpful hints other than the oil from the marinade makes a big flame... he wasn't too happy that I didn't warn him before hand.

Just Getting Started

Hi world! I have never blogged before, but I have been inspired so I am going to try it out. I am 24 years old and have been living on my own for about 4 years. I moved in with my boyfriend about 16 months ago. We are settling into a comfortable life, no marriage or kids yet. My goal for the next couple years is to find amazing recipes. Everyone always says "My mom makes the best____ " and I am going to try to find those recipes. It would also be great they were quick and easy to make, because let's face it, who wants to spend excessive hours in the kitchen? Wish me luck!
